I'm a healer at heart, always have been but sometimes it's nice to take a break and play a DPS class. As a healer, I always feel guilty if someone dies and it can be stressful. In nearly every MMO I've played, I've been a healer with DPS alts. For some reason lately in WOW I've had trouble healing, can't figure out why so my hunter became my raid character. I miss healing, loved it, was good at it until recently. I'll probably roll a healer in Pantheon and see how that goes. I'm not much on soloing, I'm there more for the social aspects than anything and soloing defeats that purpose. I want to be a useful addition to a group and a raid and be exceptional at it.
As I tend to like to identify with my character, I always start with the race choice . Read lore , look at graphics , check stats and alignement good /evil . Once the race chosen , I take whatever class is available for that race with a preference for utility .or Paladin if Paladin is available .

Tough to say... I love playing a rogue, being all sneaking and delivering huge numbers, but I also love being an enchanter and knowing the entire group depends on me making sure I land those mezzes

For Pantheon, that's going to be the Enchanter. In Dungeons and Dragons, I once played a Wizard who refused to use damage spells. You'd think that would be a horrible decision, but it turns out that very often, the most impactful spells do not deal damage.
In our first boss fight, I levitated the boss away from the party. He was a melee-focused character that hit like a truck and was swinging multiple times per turn against our low-level party. It turns out he didn't have any ranged attacks. The boss floated in the air harmlessly, the party took out his henchmen while the boss just floated in the air, angry and impotent. Alone, the boss was not nearly as much of a threat. We finished the fight without major difficulty and more resources left over than the GM was expecting.
I never played EQ, but the idea of having Crowd Control be a 4th pillar to support the usual Holy Trinity resonates with me. I'm in love with the idea of a character who can take an "it's a wipe" situation and turn it into a beautiful, orderly symphony of murder without ever firing a shot.
I've actually been getting so excited about the idea that I'm going to install Project 1999 to see how it worked in the old days. Can't wait for my turn to play Pantheon.

Generally like to feel important and play an important role, so DPS is generally out. Healer is fine when it is fun and the challenge intense. Not all games deliver on that. EQ1 Cleric far too boring. Vanguard Blood Mage and Rift Chloromancer were excellent, WildStar's Medic was decent. I've enjoyed Support roles, EQ2's Dirge was awesome and EQ1's Enchanter/Bard were fun. Primarily though, it has to be tank, preferably one with some pulling abilities. Spent many, many years on EQ1 as a Shadow Knight as my main, pulling and tanking was very enjoyable. Pantheon's Dire Lord looks nothing like EQ1s SK, so planning to give the Paladin a shot in this game. Played a Guardian in Conan, an Assassin tank in SWToR, and the aforementioned SK in EQ1. Always enjoyed the "leadership" aspect the tank role promotes.

I'm a bit of an altaholic, but if there's a good cleric or warrior type class I tend to gravitate towards that. Unfortunately, over the last decade I've found myself hating the tanks that tend to emerge in most games, especially if it feels like being a melee tank over a rangeed tank was favored and the melee felt knee-capped.
Luckily, Pantheon's tanks seem to be moving back to that more fun "in your face and hit me if you dare" style of gameplay. So I'll certainly be making a warrior. I'll also have a cleric because I love healing. :)
I'll also have as many alts of different classes as I can fit into my accoung. But my main will be a warrior or cleric. :)
My very first Advanced Dungeons and Dragons character was a Cleric, so they are my usual love. I love Healing.
In Pantheon I think I want to try the shaman first. I will eventually have one of every single class. Can't wait for NECRO in Pantheon, it's going to be great, i think.

Or, just decide to play a bard.
The Race to Class combo for me is extremely important so I will pick one first then use a process of elimination to adjust the combination to where i want it. Example, if i want to play a bard(which is what i'd like to play first if its out) then i will make up story about that character and envision what race it is.
Or, if i pick a race like Skar, I will play the class that sounds the most fun or that makes the most sense to their lore.

I choose my class based on utility. I like having options. (But I also like flashyness, EQ1 bard speed @.@!)

Pretty much this. As a roleplayer, I consider what class might fit best for the character I want to RP as well. But really it's all about the style of the class - if it's appealing or not.
I pretty much never make a decision based on practicalities like how strong a class is in its role or whatever.

Pretty much a loner, takes me awhile to make friends...so that makes me a woodelf ranger at heart, which i've played as my main since 1999 thru EQ and Vanguard. Early on it was solo-ability, then as figured my character out it became all about power (dps), as I matured its more about utility within a group.
Luckily now I have a Core group of friends that I game with and when they bring on board new players my wife tells me to play nice...I begrudgely comply, but tend to mute them in voice-chat if they annoy me. 8)
