Usually (but not always) just one. For me it's not so much a commitment thing as a time management thing. I only get a limited amount of game time in a week, and generally speaking, that's only really enough to do justice to one MMORPG at a time.
In years past when I had more free time than I do now, I would tend to play two simultaneously, or play one as a main game and dabble in a couple more. But not anymore. Even if I didn't have my job, it's not healthy for anyone to spend that much time in front of a PC - least of all me :)
I could never commit to just one. Why limit myself? I do tend to pick one MMO to be my main "raiding MMO", though, as I certainly don't have time to dedicate to more than one raid team. But right now, I'm playing WildStar (my main... for now T_T *cries forever*), GW2, WoW, occasionally pop into Rift, and I recently started ESO to spend time with a friend.
I don't really play any other type of video game, and MMOs scratch my itch of wanting to have endless lists of tasks to check off with great satisfaction. I love leveling; I love creating and customizing characters; I love running dungeons; I love exploring the open worlds; and I especially love that I can do so with my husband and friends. I just really like MMOs!

I commit fully to just one game, eating, breathing, sleeping that game, for years so long as it remains engaging and interesting. I will spend every free minute not at work or in the game reading class, race and server specific forums just to feed my insatiable lust for anything related to the game. Oh sure, it can be excessive at times, but MMOs are my primary form of entertainment and I enjoy them fully. A well designed game that is supported by a dedicated and caring developer will be repaid with years of loyalty (and multiple accounts).

I do not pay for a sub to just let it sit there while I play the new game. I am not subed to any other game atm and do not plan to until Pantheon is released. However most games now have a basic version that is free to play. They are not any fun because they limit your play and that is boring. I pray every day for 2 things. The release of Pantheon and that they will NEVER NEVER NEVER EVER GO FREE TO PLAY.

I play one MMO. I have a tendency to try everything in the game, so if I play multiple MMOs at once then they must be really lack luster. A very good MMO will take a lot of time to do all of the stuff in it and I won't have the time then if I get involved in more than one. However, I do have a lot of games that I might play just to relax from playing the MMO game if I get burnt out on it. Usually when it releases I will spend an ungodly amount of time on it for the first month and then take a few days off from it so I don't get burnt out and then will spendon an above average time on it to get everything I can done.
I love how a few days after I rant about something that brings up controversy Kilsin comes up with a question a few days later that addresses it :)
I think its safe to say that everyone in these forums hasn't committed to just 1 MMO, otherwise we wouldn't be on these forums looking for the MMO to end our search for THE ONE.
If PRotF isn't fun for someone they will play something else regardless of how "committed" they think they are to the game if there is another MMO that is funner for them. People will "try out" numerous games to see if they like it, and if they like one more than another they will play the one they like more *shrug*.
With that said, to answer the question directly I will play an MMO that I like and sometimes friends will get me free trials to try out other games, but few of my friends like the games that I enjoy (like p99). I am currently playing p99, and when I get burnt out on grinding the same area over and over and over and over to try to get through a hell level I will play something else that is less grind intensive or not play games at all for several days just to give my patience a break. (I'll likely try out Fallout 76 until PRotF Alpha opens because I'm so tired of the EQ grinding.)
