What were some under-utilized content you'd love to recapture

I was blown away when I got around to Katta Castellum.  I thought it was the most beautiful castle architecture in EQ and it was completely unused.  A totally empty zone always.

I also loved the Hollowshade War, which was so clever and so cool to partake in.  Almost no one touched this player-triggered event.  I farmed it and had fun with it.

I also had a lot of fun fishing but nothing much ever came from that

My wife loved fishing in every game. I never find the time.

I did the hollowshade war many times. Mostly for the owlbear mothers eye.

The content I miss most are, quests that took weeks to finish. Like the demi-lich skull cap quest or the Greenmist quest from EQ1. The quests were very in depth and you needed a lot of patience to get through them. The reward you recieved was great and was worth showing off, because not everyone had one.

The longest quest you'll find in todays games is the main story quest that takes you from beginning to max level and still takes a shorter time then what these other in depth quests took.

I'd like to see something akin to Vanguard's diplomacy system. I haven't really ever seen anything else like it but I really enjoyed having a progression option other than death-murder-kill-spree. It was fun to go argue with city leaders to support war efforts or try to get juicy gossip.

Dagnor's Cauldron - Did anyone use that zone? Certainly could have done with a revamp.

I question whether this is a mechanic of the quest complexity in the old games, or our knowledge of how questing works today.  Either way, I agree.  Bring back challenge and undiscovered country.
