I can find only the 2 types of stain listed in my sources that you mentioned.
If you are referring to the Ash Round Shield, the recipe I find for it says that Walnut Wood Stain is required - though that info was last updated 7 months ago. It could have been changed since then. However it could just be a typo.
There have been a number of typo's in both Schematics and Component names during development. If the name doesn't match exactly, the Schematic won't work and needs to be reported as a bug.
When you open the schematic at the Crafting table, what is the exact label on the slot that Stain goes into? Does it just say "Stain"?
Also, when you say "can't make the shield" can you be more specific? Can you not put the stain into the slot at all, or can you put it in but the "Craft" button does not light up? Or does something else happen?
