  I'm trying to do the armorsmith quest "Proper footwear" but when i craft the only T1 Boots for which I can buy a schematic from the shop, I ended up with Asherium Splinted Leather Boots which doesn't count as good for the quest.
  
  Any idea how to deal with that problem please?

  As far as I can tell, that is what the quest wants. I believe you need to make 3 sets of them, did you do that?

  Not like other quests as soon as I crafted the first boots the quest didn't moved from 0/3 to 1/3.

  Ah, ok. Frequently a small change in the language - or even just a typo - has been all that was needed to keep a quest from working. So in your quest journal, what is the exact verbiage for the boots you are supposed to make?
