For the most part, all of the nodes. In the elven starting zone there are more ore nodes available than in the Human starting Zone. Nodes seem to share for a given spawn area, as in there can only be x number of nodes and which ones are up is more or less RNG. In both areas there are very few harvestable trees, given they are both forested areas, even for fantasy this makes little sense. It's still early on, but small things add up and we want more people to play.
There should be mining areas for the bulk of the different ore nodes, one doesnt just go and find ore just laying about, requires mining, open pit or strip quarrying. The latter two options would require massive machinery, so old school mining should be the only way to get at the ore seams.
Some sort of quasi-instanced farming would solve a majority of the ingredient harvesting. It goes back about 16 years but lord of the rings online had a farming system that i've never seen replicated. Different areas of the game had farming land where players could plant and grow crops, bout the size of a small vegetable garden you would have in your backyard. Any number of players could use the same area, only the person that planted the seeds or someone they gave permissions to could see or interact with the crops they planted. Wasnt complex just saved server space on random crap all over the place.
Another point of view is that there are - FAR - too many resource nodes currently available already,
trees, vegetables, and herbs I can understand would (and should, I guess maybe?) be plentiful, but the ore nodes are out of control already and I'd like to petition that they be scaled back a bit.

Right now gathering nodes break down like this for any given region of a zone
Mining nodes
Wood trees
Food trees
Fiber plants (like jute or cotton)
Food plants
Alchemy plants (herbs, lilies).
Every time you gather a node, another node of the same type within the same region will spawn pretty much immediately. Respawns are not shared zone-wide but rather the zones are broken up into 4-5 geographical regions. Most spawn regions have between 50 and 200 total spawners for that node type within them, depending on where it is and what kind of nodes we're talking about.
If you are struggling to find gathering nodes of the type you are looking for, the best thing to do is to go further out or look in different places. For example, if you're in Thronefast and the area around Availia is feeling dry, you can head out east past the crossroads and you'll find the same nodes but be in a different spawn region (potentially with less competition).
