Gathering and challenge

    An idea to make gathering more challenging and perhaps fun could be to make nodes more random in where they spawn but to also give players tracking skills that direct them to the general location, and abilities to reveal the nodes, perhaps skills like geology or prospecting. Nodes could remain hidden untill the correct ability is used. Players can find and aquire better resource nodes when tracking skills or gathering levels increase through skill ups or exp gain.

    A hunting profession could also be introduced, insteading of making most animals skinnable, creatures such as dear could remain stealthed, these would have to be located, perhaps similar to track ability but only available to the hunters profession. Once tacked down and located they are killed and made available to skin.

    Players can perhaps be limited to only one or two harvesting professions that have to be leveled up and higher tier tools and abilities used to gain access to higher lvl resources. 

    Similar systems could be used for woodcutting/lumberjack, forraging/farming.
