They'll update pledge site and throw out a topic on the forum in the "News and Announcements" section, but you won't get an e-mail about it or anything else. If you watch Pantheon streamers then Bazgrim is most likely to mention it in his Flashes.

Welcome. There is no guarantee they will tell us anything before changing the pledge system - something that is in the works but that has been delayed by other priorities.

But past history indicates that they will tell us before eliminating any of the current options so we will get one last chance to upgrade to it.

One thing they may do is toss in some a la carte pledge items. Thus - for $100 you can get X or Y without needing to spend $500 to get the new package that includes X and Y. Or for $500 you can get any 5 elements some of which are in one new package and some of which are in a different new package. Note that prices were made up just to illustrate the point.

But past history also indicates that some features may go bye-bye and not be available in the future. So it is wise if one wants something in a different package to keep an eye open for that "last week to upgrade to it and then it is gone forever" warning.
